Very Moist Banana Bread

1 3/4 cup flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1/2 cup butter-flavor shortening
2 cup sugar
2 T. milk
2 eggs
2 cups bananas (over-ripe)

In one bowl, combine dry ingredients. In another bowl, combine shortening and sugar; beat these together until fluffy. Add milk and eggs; mix well. Mash bananas by hand with a fork and add to wet ingredients; mix by hand. Add wet ingredients to dry ingredients; blend until just moist. Pour dough in bread pan, about 3/4 the way full. Bake at 350 for about 1 hour. Test doneness with toothpick.
