Arugula, Grapefruit, and Avocado Salad

2 ruby red grapefruits
2 Tbsp. olive oil
3/4 tsp. kosher salt
1 avocado, peeled, cored, sliced
1/4 C. red onion, thinly sliced
6 C. fresh arugula

Cut the grapefruit into segments and removed the skins.  Reserve the juice.  Place 1/3 C. of grapefruit juice in a bowl and mix in the olive oil and salt.  Add the avocado and onion to the dressing and stir gently.

To serve, place the arugula in a large bowl.  With a slotted spoon, remove the grapefruit and avocado from the dressing and toss them with the arugula.  Place the salad on a plate and garnish with the grapefruit segments.  Drizzle the salad with more dressing if needed.
